font-family: 標楷體; font-size: 18px;">一、依食品衛生管理法第二十條第一項之規定訂定之。 </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;"><span style="font-family: 標楷體;">二</span>、本規範適用於低酸性及酸化罐頭食品。 </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;"><span style="font-family: 標楷體;">三、</span>低酸性及酸化罐頭食品製造業者除應符合本規範之相關規定外,並應符合食品良好衛生規範之相關規定。 </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><b><span style="font-family: 標楷體; font-size: 16pt;">貳、專有名詞定義</span></b><b> </b></span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">四、</span><span style="font-family: 標楷體;">本規範名詞定義如下:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp; <span style="font-family: 標楷體;">(一)</span><span style="font-family: 標楷體;">罐頭食品:係指食品封裝於密閉容器內,於封裝前或封裝後施行商業滅菌而可在室溫下長期保存者。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;"><span style="font-family: arial;">&nbsp; </span>(二)</span><span style="font-family: 標楷體;">低酸性罐頭食品:係指其內容物</span>pH<span style="font-family: 標楷體;">值達到平衡後大於四點六,且水活性大於零點八五並包裝於密封容器,且於包裝前或後施行商業滅菌處理保存者。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp; <span style="font-family: 標楷體;">(三)</span><span style="font-family: 標楷體;">酸化罐頭食品:係指以低酸性或酸性食品為原料,添加酸化劑及(或)酸性食品來調節其</span>pH<span style="font-family: 標楷體;">值,使其最終平衡</span>pH<span style="font-family: 標楷體;">值小於或等於四點六,水活性大於零點八五之罐頭食品。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp; <span style="font-family: 標楷體;">(四)</span><span style="font-family: 標楷體;">密閉容器:係指密封後可防止微生物侵入之容器,包括金屬、玻璃、殺菌袋、塑膠及積層複合等容器與符合上述條件之其它容器。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;"><span style="font-family: 標楷體;">&nbsp;&nbsp;&nbsp;(五)</span>水活性:係指食品之水蒸氣壓除以在同一氣壓溫度下純水之水蒸氣壓所得之商。</span>&nbsp;&nbsp;<br></br>&nbsp;&nbsp; <span style="font-family: 標楷體;">(六)</span><span style="font-family: 標楷體;">商業滅菌:係指其殺菌程度應使殺菌處理後之罐頭食品,在正常商業貯運及無冷藏條件下,不得有微生物繁殖,且無有害活性微生物及其孢子之存在。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; 無菌加工設備及容器之商業滅菌,係指利用熱、化學殺菌劑或其他適當的處理使無有害活性微生物及其孢子存在,並使製造出來之食品在室溫情況下貯運,對人體健康無害的微生物亦不會生長者。 </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp; <span style="font-family: 標楷體;">(七)</span><span style="font-family: 標楷體;">昇溫時間:係指蒸汽開始導入殺菌設備內至殺菌開始計時為止之時間。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp;&nbsp;<span style="font-family: 標楷體;">(八)</span><span style="font-family: 標楷體;">殺菌重要因子:係指任何特性、條件或參數等,其變異足以影響其所設定之殺菌方法及商業滅菌效果之達成者。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp; <span style="font-family: 標楷體;">(九)</span><span style="font-family: 標楷體;">罐頭初溫:係指殺菌開始前,最冷罐之平衡溫度。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp; <span style="font-family: 標楷體;">(十)</span><span style="font-family: 標楷體;">殺菌值</span>(F0)<span style="font-family: 標楷體;">:以分鐘為單位。表示熱處理條件之殺菌程度,其熱致死總效應相當於達華氏二五0度</span>(<span style="font-family: 標楷體;">攝氏一二一點一度</span>)<span style="font-family: 標楷體;">時,對</span>z<span style="font-family: 標楷體;">值等於華氏一八之細菌或孢子殺滅能力。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp; <span style="font-family: 標楷體;">(十一)</span><span style="font-family: 標楷體;">無菌加工與包裝:係指經商業滅菌並冷卻過之食品,在無菌狀態下裝於已商業滅菌過之容器中,並在無菌狀態下密封者。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp;&nbsp;<span style="font-family: 標楷體;">(十二)</span><span style="font-family: 標楷體;">殺菌條件:指罐頭食品為達到商業滅菌安全,所採行之控制處理及殺菌程序。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp; <span style="font-family: 標楷體;">(十三)</span><span style="font-family: 標楷體;">保溫試驗:將樣品置於選定之溫度保持一段特定時間,促使微生物生長,以檢查是否依殺菌條件操作之試驗。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;&nbsp;&nbsp;&nbsp;<span style="font-family: 標楷體;">(十四)</span><span style="font-family: 標楷體;">適當:指在符合良好衛生作業下,為完成預定目標所用的方法或措施等。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><b><span style="font-family: 標楷體; font-size: 16pt;">參、生產與加工之控制</span></b><b> </b></span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">五、</span><span style="font-family: 標楷體;">產品調製:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;"><span style="font-family: 標楷體;">(一)</span>使用易受微生物污染之主副原料前,製造業者須確定此主副原料之微生物含量適用於罐頭食品加工之用。 </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(二)</span><span style="font-family: 標楷體;">使用之罐頭食品容器應符合下列規定:</span> </span></p><ol> <li><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;">進廠時,應由供應商提供品保証明或抽取適量樣罐,檢查其品質及清潔等。 </span></li> <li><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;">存放場所應合乎衛生,避免污染,倉儲過程中需溫溼度管制者,應建立管制方法與基準,並確實記錄。 </span></li> <li><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;">容器使用前應以適當方法確保其清潔。 </span></li> <li><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;">在輸送、搬運、裝罐等過程中應避免碰傷,並防止夾雜物之侵入。 </span></li></ol><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(三)</span><span style="font-family: 標楷體;">酸化罐頭食品之製造、加工及包裝,應使其產品之平衡</span>pH<span style="font-family: 標楷體;">值,在殺菌後,達到並保持在</span>pH<span style="font-family: 標楷體;">值四點六或四點六以下,製造方法應與殺菌條件中規定者相符,且應有適當之控制,使產品之平衡</span>pH<span style="font-family: 標楷體;">值不大於四點六。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(四)</span><span style="font-family: 標楷體;">原料殺菁處理應符合下列規定:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">1.<span style="font: 13.5pt/normal times new roman; font-size-adjust: none; font-stretch: normal;">&nbsp; </span><span style="font-family: 標楷體;">加熱殺菁時,應在規定殺菁溫度與時間下行之。殺菁完畢後應迅速冷卻,或立即做次一步驟之加工,不可拖延。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">2.<span style="font: 13.5pt/normal times new roman; font-size-adjust: none; font-stretch: normal;">&nbsp; </span><span style="font-family: 標楷體;">殺菁機應注意清洗,其用熱水殺菁者,應經常補充熱水及排水,以減少殺菁水被污染。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">3.<span style="font: 13.5pt/normal times new roman; font-size-adjust: none; font-stretch: normal;">&nbsp; </span><span style="font-family: 標楷體;">原料洗滌及冷卻用水應符合飲用水水質標準。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(五)</span><span style="font-family: 標楷體;">產品之裝罐,應予以管制,以確保其符合殺菌條件所規定之裝量。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(六)</span><span style="font-family: 標楷體;">裝罐後之脫氣應予以控制,以符合原來所設計殺菌條件之要求。使用脫氣箱者,脫氣箱使用終了時,應經常清洗乾淨並保養。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(七)</span><span style="font-family: 標楷體;">在殺菌條件中與產品調製相關之重要因子,應予以控制,以確保此等因素均在控制界限內。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">六、</span>&nbsp;<span style="font-family: 標楷體;">殺菌條件之訂定:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(一)</span><span style="font-family: 標楷體;">低酸性罐頭食品應訂定殺菌條件,其殺菌條件應由具有訂定該設備殺菌條件及具有對低酸性罐頭食品殺菌專門知識之機構訂定,其資格由中央主管機關認定。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;">(二)&nbsp;</span><span style="font-family: 標楷體;">殺菌條件之訂定,應考慮商業生產上可能遭遇之變異種類、程序及各種變異之組合,影響殺菌條件之重要因子,均應於殺菌條件中規定。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(三)</span><span style="font-family: 標楷體;">殺菌值應依前項所訂之殺菌條件計算,用以建立殺菌條件之各種記錄應予保存,以供查核。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(四)</span><span style="font-family: 標楷體;">酸化罐頭食品應訂定殺菌條件,其殺菌條件應由具有訂定該設備滅菌條件及具有對酸化罐頭食品殺菌專門知識之機構訂定,其資格由中央主管機關認定。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(五)</span><span style="font-family: 標楷體;">低酸性罐頭食品之滅菌條件,其殺菌值</span>(F<sub>0</sub>)<span style="font-family: 標楷體;">應大於等於三。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">七、</span>&nbsp;<span style="font-family: 標楷體;">殺菌作業之管理:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;">(一)&nbsp;</span><span style="font-family: 標楷體;">每一種產品所設定之殺菌條件,應張貼於殺菌設備附近明顯易見或置於殺菌操作人員容易取閱之處。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(二)</span><span style="font-family: 標楷體;">殺菌室應建立有效防止已殺菌與未殺菌罐頭混雜的管制系統,以識別該批罐頭是否已經殺菌。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(三)</span><span style="font-family: 標楷體;">殺菌操作應加以控制,至少應符合殺菌條件設計。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(四)</span><span style="font-family: 標楷體;">計時之時鐘應精確且易觀察,不得使用手錶或袋錶。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(五)</span><span style="font-family: 標楷體;">殺菌操作人員應即時填寫殺菌工作報告,並每日在自動溫度紀錄儀紙上簽名,此兩種記錄應互相對照。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;">(六)&nbsp;</span><span style="font-family: 標楷體;">殺菌工作報告及自動溫度紀錄儀紙,在製造後一星期內,應由殺菌管理人員核對簽名;密封紀錄應由品管主管或製造主管核對簽名。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(七)</span><span style="font-family: 標楷體;">殺菌及密封相關紀錄至少應保存至該批成品之有效期後六個月,以供查核。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">八、</span>&nbsp;<span style="font-family: 標楷體;">殺菌、排氣或重要控制因子之變異:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">低酸性、酸化罐頭食品於核對其生產記錄後,發現有低於殺菌條件或酸化罐頭產品平衡</span>pH<span style="font-family: 標楷體;">值大於四點六時及重要控制因子未妥善控制時,生產者應採取下列方式之一處置:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(一)</span><span style="font-family: 標楷體;">應依據符合第六條第一項規定之機構所定,足以確保產品安全的方法重行殺菌,並保存此重行殺菌之完整紀錄。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;">(二)&nbsp;</span><span style="font-family: 標楷體;">殺菌、排氣或重要因子未妥善控制造成之偏差,於殺菌中發現者,應延長其殺菌時間;在殺菌完後即時發現者,應全部重新殺菌;在殺菌完後一段時間發現者,除非經評估証實此等產品無危害公共健康的微生物存在,否則應重行殺菌或予銷毀。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><b><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;</span></b></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><b><span style="font-family: 標楷體; font-size: 16pt;">肆、殺菌設備與方法</span></b><b> </b></span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">九、</span>&nbsp;<span style="font-family: 標楷體;">靜置式殺菌釜蒸汽加壓殺菌:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;">(一)&nbsp;&nbsp;</span><span style="font-family: 標楷體;">玻璃水銀溫度計:</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">1.<span style="font: 13.5pt/normal times new roman; font-size-adjust: none; font-stretch: normal;">&nbsp; </span><span style="font-family: 標楷體;">每一殺菌釜至少裝置一具指示刻度在攝氏零點五度的水銀溫度計,其長度至少一七八公厘</span>(<span style="font-family: 標楷體;">七吋</span>)<span style="font-family: 標楷體;">,最高及最低刻度範圍不得超過五五度。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">2.<span style="font: 13.5pt/normal times new roman; font-size-adjust: none; font-stretch: normal;">&nbsp; </span><span style="font-family: 標楷體;">裝置前應送經主管機關認可的機構校正,裝置後每年至少應校正乙次,校正機構應保存所有校正資料。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">3.<span style="font: 13.5pt/normal times new roman; font-size-adjust: none; font-stretch: normal;">&nbsp; </span><span style="font-family: 標楷體;">每一支溫度計應貼附最近校正的日期標誌,並附有校正資料。</span> </span></p><p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;">4.<span style="font: 13.5pt/normal times new roman; font-size-adjust: none; font-stretch: normal;">&nbsp; </span><span style="font-family: 標楷體;">溫度計使用前水銀柱有斷離或不能準確調整時,應送修或更換。</span> </span></p><p style="line-height: 23pt; font-size: 18px;"><span style="font-family: 標楷體;">(四)</span><span style="font-family: 標楷體;">影響殺菌之重要因子:</span><br> </br> <span style="font-family: 標楷體;">殺菌條件之重要因子,應以足夠頻率加以測定,並做記錄。 </span></span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-family: 標楷體; font-size: 18px;"><span style="font-family: 標楷體;">十四、</span>其他型式之低酸性罐頭食品之殺菌設備,應依本規範辦理,且應由中央衛生主管機關認定具有對低酸性罐頭食品加熱殺菌專門知識之機構測定,以達商業滅菌之目的。 </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><b><span style="color: rgb(0, 0, 0); font-size: 18px;"></span></b></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><b><span style="font-family: 標楷體; font-size: 16pt;">伍、人員</span></b><b> </b></span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">十五、</span><span style="font-family: 標楷體;">凡製造罐頭食品之工廠,應置專司殺菌技術管理人員及殺菌操作人員與密封檢查人員及密封操作人員。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;">十六、&nbsp;</span><span style="font-family: 標楷體;">前條殺菌技術管理人員與低酸性金屬罐之殺菌操作、密封檢查及密封操作人員應經中央衛生主管機關認定之機構訓練合格並領有証書,前條其他人員應有訓練證明。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><b><span style="color: rgb(0, 0, 0); font-size: 18px;">&nbsp;</span></b></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><b><span style="font-family: 標楷體; font-size: 16pt;">陸、容器密封及管制</span></b><b> </b></span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">十七、</span><span style="font-family: 標楷體;">容器之密封</span>(<span style="font-family: 標楷體;">封口</span>)<span style="font-family: 標楷體;">,應符合下列規定:</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(一)</span><span style="font-family: 標楷體;">金屬罐捲封之外觀檢查,應由曾受捲封技術或捲封品管訓練合格之人員負責,檢查間隔不得超過一小時,並詳實記錄。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(二)</span><span style="font-family: 標楷體;">金屬罐之外觀檢查捲封不得有切罐、斷封、尖銳捲緣、疑似捲封、跳封、唇狀或舌狀等之缺點。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(三)</span><span style="font-family: 標楷體;">捲封之解體檢查,應由曾受捲封或捲封品管訓練合格人員負責執行。每罐型第一罐應行解體檢查,其後檢查間隔不得超過四小時,並詳實記錄之。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(四)</span><span style="font-family: 標楷體;">前項第三款之檢查項目為捲封寬度及厚度、罐蓋深度、蓋鉤、罐鉤、鉤疊長度或百分鐘率及皺紋度。其捲封品質與檢驗方法應符合中國國家標準有關食品罐頭用圓形金屬空罐標準及食品罐頭用圓形空罐檢驗方法。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(五)</span><span style="font-family: 標楷體;">玻璃瓶之封蓋,不得有斜蓋或密閉不緊等外觀檢查密封不完全之缺點。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">(六)</span><span style="font-family: 標楷體;">殺菌袋之封口外觀檢查不得有針孔、封口不平、封口處殘留夾雜物或封口不完全等引起漏袋之缺點,其品質與檢查方法應符合中國國家標準有關殺菌袋裝食品標準及包裝食品殺菌袋檢驗方法。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font: 13.5pt/normal 標楷體; font-size-adjust: none; font-stretch: normal;">(七)&nbsp;</span><span style="font-family: 標楷體;">其他容器應由訓練合格之容器封口技術人員以適當頻率檢查封口機的封口效率及產品封口密封性,並詳實記錄之。</span> </span></p> <p style="line-height: 23pt; layout-grid-mode: char;"><span style="color: rgb(0, 0, 0); font-size: 18px;"><span style="font-family: 標楷體;">十八、殺菌冷卻後之罐頭,使用輸送帶輸送時,應避免輸送帶與捲封</span>(<span style="font-family: 標楷體;">封口</span>)<span style="font-family: 標楷體;">之接觸,所有破損之輸送帶、罐緩衝器等均應更新,與罐頭捲封</span>(<span style="font-family: 標楷體;">封口</span>)<span style="font-family: 標楷體;">接觸的軌道及輸送帶應保持清潔乾淨。</span>&nbsp;&nbsp;</span></p> <p style="line-height: 23pt;
